Thanksgiving Dinner
I have a lot to be thankful for and as our turkey holiday is fast approaching I start to think about all the blessings that have been bestowed upon me and what I'm going to do for this upcoming holiday. Turkey day is best known for football, the Macy's Thanksgiving Day Parade, eating more in one day than we would eat in a week and pumpkin pie. Though I'm not a big pumpkin pie fan, put a pumpkin cheese roll in front of my face and watch out - especially if you include chocolate chunks.
This is the kind of holiday that stresses people like me out. If you don't know your way around the kitchen than the thought of trying to cook a bird that weighs more than your cat, for 12+ people, can make you want to run for Pizza In The Sky instead of putting on an apron and getting out a cook book.
I'd love to hear how you plan to spend this thanksgiving and what non-traditional things you like to make - like cranberry relish instead of the cranberry "stuff" from a can or pumpkin cheese roll vs. a pumpkin pie.
Or share your favorite thanksgiving story that is related to food - like the time I tried to save the carcass from our turkey dinner to make soup the next day and it fell through the bag and landed on the kitchen floor. My dogs were in hog heaven and we never did get to make turkey soup.
My best advice from someone who spends as little time in the kitchen as humanly possible: Stay out of the kitchen, let your mom and the hubs tend to the meal and spend some time with any one of your sweet blessings.

The pumpkin roll does look GREAT with the addition of the chocolate chunks, regardless of how it looks it tastes sooo yummy. I am also not a fan of pumpkin pie, but this a great subtitute for pie. That turkey looks so good it made me hungry for turkey and I don't really care so much for turkey either, it's all "the fixums" that I love, your great potatoes and even tho we brought icky jellied cranberry sauce to last dinner, because Jim is reluctant to try anything new. The cranberry relish is really good and probably a thousand times better for you. Great picture of Belleau, big bubba, they loved the turkey too!!!!!! Love you. Mom

For those that wanna try it...here is my recipe for a pumpkin spice roll...minus the chocolate chunks. But I guess you could just shave some chocolate and sprinkle it on top.
Pumpkin Roll
Ingredients:
3 eggs, beaten
1 cup white sugar
1/2 tsp ground cinnamon
2/3 cup pumpkin puree
3/4 cup all purpose flour
1 tsp baking soda
Icing:
2 tbsp butter, softened
8 oz cream cheese
1 cup powdered confectioners sugar
1/4 tsp vanilla extract
some powdered sugar for "dusting"
Preheat oven to 375 degrees. Butter/grease 10x15" jelly roll pan.
In a mixing bowl, blend together the eggs, sugar, cinnamon, and pumpkin.
In a separate bowl, mix flour, and baking soda. Add to pumpkin mixture and blend until smooth.
Evenly spread the mixture over the prepared jelly pan.
Bake 15-25 minutes. Remove from oven and allow to cool only enough to handle.
Remove cake from pan and place on a tea towel (cotton, not terry cloth) Roll up the cake by rolling a towel inside cake and place seamside down to cool.
While cake is cooling, prepare frosting:
Blend butter, cream cheese, powdered sugar, and vanilla.
When cake is completely cooled, unroll and spread with cream cheese filling.
Roll up again without the towel.
Wrap with plastic wrap and refrigerate until ready to serve.
Sprinkle top with powdered sugar. You can slice into 8-10 servings.
